Method

Mix the DS Bond and Cajun Blend together. Coat each medallion until well covered.

Add the rest of the ingredients and mix well.

Place in boilable vac bags on full.

Steam for 1hr at 85c 100% steam.

Chill to fridge temperature within 90 minutes.

Equal Parts Verstegen DS Bond & Verstegen Cajun Blend

130g Chopped Celery

130g Sliced Onion

2 Granny Smiths Apples (cored and cut in to 6 wedges)

100g Apple Juice

800g  Verstegen Salsa Cajun Sauce
