Method
Dust each fillet in the DS Bond & Cajun Blend.
Add the rest of the ingredients and mix well.
Place in boilable vac bags on full making sure the fillets are in one layer (not on top of each other)
Steam for 1hr. 100% steam 85c. Or make use of the probe pads to a core of 73c.
