Ingredients
- 1kg Pork Belly
- 10g Fresh Sage
- 10g Fresh Garlic
- 10g Sea Salt
- 25g World Spice Blend Mediterranean PURE
- 15g Fruit Pepper Orange PURE
Method
Optional
- Brine Pork Belly for 24-36 hours in a basic brine
- Dry pork in fridge overnight
Normal Method
- Score belly skin in diagonal cuts and rub in Sea Salt to create a crisp skin once cooked
- Mix the World Spice Blend and Fruit Pepper Orange together and rub into the other side of the Belly
- Crush the Garlic and tear the Sage leaves and combine.
- Evenly Sprinkle the mix over the Belly.
- Roll the Pork belly and tie with the Butchers Twine
- Portion/Present as desired.
