Ingredients

  1. 1kg Pork Belly
  2. 10g Fresh Sage
  3. 10g Fresh Garlic
  4. 10g Sea Salt
  5. 25g World Spice Blend Mediterranean PURE
  6. 15g Fruit Pepper Orange PURE

Method

Optional

  1. Brine Pork Belly for 24-36 hours in a basic brine
  2. Dry pork in fridge overnight

Normal Method

  1. Score belly skin in diagonal cuts and rub in Sea Salt to create a crisp skin once cooked
  2. Mix the World Spice Blend and Fruit Pepper Orange together and rub into the other side of the Belly
  3. Crush the Garlic and tear the Sage leaves and combine.
  4. Evenly Sprinkle the mix over the Belly.
  5. Roll the Pork belly and tie with the Butchers Twine
  6. Portion/Present as desired.
