400 g Marinade – Chinese Plum
80 g Spicemix del Mondo – Chinatown
24 g Nitrite salt
Method
Check the pork belly for unevenness.
Then cut into pieces, about 350 to 400 grams.
Sprinkle the streaky bacon with the Colorozo salt and rub it in well.
Make a mixture of Marinade – Chinese Plum and Spicemix del Mondo – Chinatown and marinate the pork belly.
Leave to marinate chilled for at least 12 hours.
Cook in a preheated oven at 150 ° C for 45 to 50 minutes or to a core of 72 ° C.
For the last 5 minutes, increase the temperature to 180 ° C for a crispy crust.
