Ingredients
4 Thick slices of bread
200 g Smoked salmon
2 Avocados
½ Lime
4 Eggs
½ Red onion
1 Tbsp Ras el Hanout
4 Tbsp olive oil
Salt and pepper, to taste
Method
Mix 4 tbsp olive oil with half the Ras el Hanout. Brush the thick slices of bread with the marinade on one side with a brush. Place under the grill until brown on both sides.
Meanwhile, prepare the eggs according to your preference (such as poaching, soft or hard boiled or fried).
Chop the red onion very finely. Pit and mash the avocados. Mix the mashed avocados with the red onion, juice of the ½ lime and the remaining Ras el Hanout.
Divide the mashed avocado over the toast. Cover with the slices of salmon and an egg. Add salt to taste.
