Ingredients
2 Sweet potatoes
80 g Feta
40 g Red onion
40 g Paprika
40 g Corn
80 g Crème fraîche
Coriander, for garnish
Spicemix – Puebla, to taste
Method
Wrap the sweet potatoes in aluminum foil and cook at 180°C until tender and leave to cool.
Crumble the feta cheese and mix in the red onion, paprika and corn, season with the Spicemix – Puebla.
Mix the Spice Oil – Green Herbs Garlic with the crème fraîche.
Cut the sweet potato length ways and fill with the pre made filling.
Spoon the sauce over the potato.
Sprinkle the potato with the coriander.
